1tablespoon vinegar
1teaspoon sugar

250mlgrape seed oil
2tablespoons yoghurt
salt, to taste
Pickled Vegetables
125mlwater
60mlvinegar
¼cup sugar
peel of ½ lemon
1teaspoon whole cumin seeds
2endive, outer, thinly sliced
1small bunch pig face, thinly sliced
To serve
endive, outer leaves only, reserved in iced lemon water
