2shallots, finely sliced
1clove garlic, crushed
1sprig rosemary
1sprig thyme
2tbsp balsamic vinegar
250mlred wine
230mlbeef stock
1tbsp butter
Roast Potato
340gdesiree potato, peeled and cut into 3cm pieces
30mlolive oil
2sprigs rosemary
salt and pepper, to taste
Sweet Potato Mash
200gsweet potato, peeled and cut into 2cm pieces
1 ½tbsp olive oil
2tsp balsamic vinegar
salt and pepper, to taste
Beetroot and Leek
vegetable oil, for frying
1beetroot, peeled and sliced thinly on a mandolin
1small leek, white part only, cut into 2cm rounds
Asparagus
3bunches asparagus, tips only
salt and pepper, to taste
Beef Fillet
4tbsp olive oil
4 x 200gmeye fillet, trimmed and wrapped tightly in plastic wrap overnight to shape
1sprig thyme
1clove garlic, skin on and crushed
1tbsp butter
salt and pepper, to taste
