White wine vinegar, to taste

Apple and Beetroot Salad
1tablespoon lemon juice
½teaspoon Dijon mustard
2tablespoons olive oil
1green apple, cut into thin matchsticks
1small beetroot, cut into thin matchsticks
1tablespoon pepitas, toasted
1teaspoon black sesame seeds
