Ingredients: 100g caster sugar; 400g strawberry guavas, peeled and diced; 100g fresh strawberries, hulled and halved; 200g milk; 6 egg yolks; 200g caster sugar; 2 – 3 ripe custard apples; 50g sugar syrup; 100g pouring cream; 200g pouring cream; 1 vanilla bean, split, seeds scraped; 2 egg yolks; 40g caster sugar; 100g double cream; canola oil spray; 150g egg white; 150g caster sugar; 100g maltose syrup; 50g caster sugar; 1 tbsp flaked almonds; 175g caster sugar; ½ vanilla bean, split, seeds scraped; 375g strawberry guavas, peeled and diced; 100g Guava Purée; 200g Vanilla Cream; equal quantities icing sugar and rice, in a shaker, to dust
