3lamb shanks

3roma tomatoes, very ripe, cut in quarters
2dried ancho chillies, stem removed, sliced lengthways, seeds removed
1dried guajillo chilli
1 tbsplight extra virgin olive oil
1small onion, finely chopped
2 clovesgarlic, finely chopped
1 tspcumin seeds
2 wholecloves
1 stickcinnamon
2 ribbonsorange peel, about 5cm in length
2bay leaves
1 tbspMexican oregano
3sprigs thyme
½ tspblack ground pepper
2 tbspsea salt flakes
750mlchicken stock
½ cupwhite wine vinegar

3 pieceslamb shoulder/leg bone, 10cm in length, halved lengthways
light olive oil, for drizzling

10 sprigscoriander, leaves finely shredded (discard stems)
1shallot, finely diced
1 tbspfresh lime juice, to taste

Mulato Chicharron

¼Lebanese cucumber, finely diced

red/pink begonia flower buds
