1 ½ cupscoconut milk

20gtamarind paste
20gpalm sugar
150g x 4snapper fillets, skin removed
salt, to taste

1 cupbasmati rice
2 tspcumin seeds
1cinnamon stick
2 tbspghee
1 tspsalt
Cucumber and Pineapple Archar
½small cucumber, sliced into ribbons
¼pineapple, thinly sliced
1long red chilli, thinly sliced
30gpalm sugar
60mlwhite vinegar
