¼ cupextra virgin olive oil
2 tbsplemon juice
1 heaped tbsptahini
2 tspmaple syrup
1 clovegarlic, peeled
½ tspground cumin
1/3 cupiced water

Harissa Sauce
1 largered capsicum
6 largecherry tomatoes
2 tspcumin seeds
1 tspcaraway seeds
3long red chillies, roughly chopped
½ cupextra virgin olive oil
1 tbsptomato paste
2 tspmaple syrup
2 tspred wine or sherry vinegar
sea salt
Roasted Cauliflower
2 x 3-4cmthick steaks, cut from the centre of a large cauliflower
2 tbspextra virgin olive oil
1 tspground cumin
small outer cauliflower leaves, washed
50gbutter
1 tbsplemon juice
2 tbspmaple syrup
2 tbspsherry vinegar
¼ cupfresh redcurrants
sea salt, to taste
Fried Chickpeas
80gtinned chickpeas, rinsed and drained
2 tbspplain flour
1/2 tspground sumac
1 cupsunflower oil, for frying

Spiced Seed Mix
2 tsppistachio nuts, toasted and chopped
1 tspwhite sesame seeds, toasted
1 tspsunflower seeds, toasted and chopped
½ tspground sumac
½ tspwhole cumin seeds, toasted and crushed
sea salt and cracked black pepper, to taste
