500gplain flour
280gwater
1 1/2 tbspvegetable oil, plus ectra
1 tbspcondensed milk
1 tspsalt
6 tbspghee, melted and cooled
Red Curry Paste
Roots from 2 bunches coriander, roughly chopped
1medium red onion, roughly chopped
6cm pieceginger, roughly sliced
5cm piecegalangal, roughly sliced
6 clovesgarlic, peeled
6kaffir lime leaves, torn
2lemongrass stalks, bruised and roughly sliced
15dried Kashmiri chillies, seeds removed, soaked in hot water, soaking water reserved
2limes, juiced
2 tspground coriander
1 tspground cumin
1 tspbelacan
3/4 tspground turmeric
1 tspsalt
Red Curry Soup
1/3 cupgrapeseed oil, plus extra
Red Curry Paste
1 1/2 tbspchilli soy beans in oil plus 1 tbsp oil
400mlcoconut cream
400mlcoconut milk
1/4 cupfish sauce
2 1/2 tbspKorean chilli flakes
2 tbspwhite sugar
1/2 tspsalt
1 cuproughly chopped fresh pineapple
1/2red capsicum, roughly chopped
1/2medium eggplant, cubed, 1.5cm
1 1/2 cupsweet basil leaves
1-2 tbsplime juice, to taste
salt, to taste
Coconut Rice
1 1/2 cupsjasmine rice
2 1/4 cupswater
2/3 cupcoconut milk
1 tbspfried shallots
2 sprigscoriander, leaves picked
salt
Prawn Chilli Powder
8dried Kashmiri chillies, deseeded and roughly chopped
1/3 cupdried shrimp
1/2 tspsalt
sweet basil leaves, to serve
