¼red onion
¼bunch coriander, leaves picked
1 ½ tbsprice wine vinegar
juice and zest ½ lime
1long red chilli, thinly sliced
2 tspwater
1 tspcaster sugar
salt, to taste
oil, for frying
spring onion, chilli, coriander leaves and spice mix, to serve
