1.5kgwhole green drumhead cabbage
1 tbspgrapeseed oil

2 - 2/12 tbspgochujang
Leek Puree
40gbutter
1 tbspolive oil
2leeks, washed and sliced into small chunks
1 clovegarlic, peeled and finely slices
1/2 tspcelery seed
1/2 cupmilk
1/4 cupthickened cream
2 tspground white pepper
salt
lemon juice, to taste

1 cupgrapeseed oil
1leek, white part only, washed and shredded into 5 cm lengths

Chilli Oil
reserved oil from Crispy Leeks
4 tbspchilli flakes
1/4 cupChinese black vinegar
1 tbspagave syrup
3 clovesgarlic, peeled and thinly slived
1 inch piece of ginger, peeled and grated
1/2red chilli, roughly diced
1 1/2 tspSichuan peppercorns, crushed
1 1/2 tspsalt, or to taste
To Garnish
2-3snow peas, thinly sliced
