1kg whole coral trout or 2 coral trout fillets
2 tspgrapeseed oil

1large ripe pineapple
1 tbspgrapeseed oil
1large brown onion, sliced
3garlic cloves, crushed
1smoked ham hock, meat diced
20gthumb sized piece ginger, sliced
2bird’s eye chillies, split lengthways
1jalapeno, split lengthways
4kaffir lime leaves
1Lchicken stock
1-2 tbspfish sauce, to taste
1lime, juiced
Pickled Pineapple
1/2 cupwhite vinegar
2 tbspsugar
2 tbsp waterwater
1 tbspfish sauce
1/2 cupreserved diced pineapple
To serve
6reserved thin slices pineapple
1kohlrabi, peeled, sliced thinly on a mandolin then cut into 5cm rounds
