8Australian scallops, without roe, butterflied horizontally
Pickled Apple
1/2 cupwhite vinegar
1/4 cupcaster sugar
1/4 cupwater
pinchsalt
1red apple, sliced thinly on the mandolin into 10 rounds
Fried Curry Leaves and Shallots
300mlgrapeseed oil
1 sprig (10 -12 leaves)sprig curry leaves
1shallot, finely sliced
To serve
30groasted peanuts, crushed
1small finger lime
10shaved slices daikon
2 tbspcoconut milk
