½red onion, diced

1 tbspChinese cooking wine or sake
1 tsprice wine vinegar
300gthick fillets Murray Cod, cut into 4 even portions
5cm pieceginger, julienne
2-3spring onion, finely sliced
2 tbspGinger and Garlic Oil
salt and black pepper, to taste
juice of ½ a lime
To Serve
steamed jasmine rice, to serve
To Garnish
thinly sliced bird's eye chillies and coriander leaves
