Thai Fruit Salad Curry
1/2large bunch coriander
1stalk lemongrass, white part only, finely chopped
4small red chillies, roughly chopped
4long red chillies, roughly chopped
4cloves garlic, peeled
5cmpiece ginger, peeled and roughly chopped
5cmpiece galangal, chopped
1zest makrut lime
2 tbspgrapeseed oil
280gdrained, canned jackfruit, cubed
1small eggplant, peeled and cut into 2cm cubes
565gcan lychees in syrup
1/4 cupfish sauce, plus extra to taste
2makrut lime leaves, chiffonade
400mlcanned coconut cream
2 tbspbrown sugar, plus extra to taste
1/4fresh pineapple, cored and cut into pieces
1starfruit, cut into 5mm thick slices
12grape tomatoes
200mlcanned coconut milk
2 tbsplime juice, plus extra to taste
steamed jasmine rice, been shoots and lime cheeks, to serve
toasted salted peanuts, coriander leaves and sliced chillies, to garnish
