1 tbspcoriander seeds
2 bulbsgarlic, cut in half horizontally
4cloves
1.6kgwhole chicken
1 tbspChinese cooking wine
1 tbspsesame oil
4 tbsplight soy sauce
2 tbspwhite soy sauce
1 tbspfish sauce
1 tspmirin
75gginger, peeled and chopped
25ggalangal, peeled and chopped
2Lwater or chicken stock
salt, palm sugar, lime juice and fish sauce, to taste
Peanut Lime Sambal
200graw unsalted peanuts
3shallots, peeled and quartered
5 freshlong red chillies, roughly chopped
1 stalklemongrass, white part only, chopped
2bird’s eye chilli
5cloves garlic, peeled
3dried chillies
3limes, juiced and zested, or to taste
3 tbspfish sauce
30gpalm sugar, or to taste
2 tbsptamarind paste
To garnish

spring onion
chilli
lime zest
