3bird’s eye chillies
5cm pieceginger, roughly chopped
6 clovesgarlic, peeled
2 stalkslemongrass, white part only
4coriander roots, cleaned
1 tbspgrapeseed oil
1medium red capsicum
200mlapple cider vinegar
1 ½pineapples, peeled and finely chopped
500gfrozen mango, thawed
½ cupbrown sugar
3 tbspsalt flakes, or to taste
